Thanksgiving Leftover Recipes

Every year we look forward to coming up with a new way to have the same ingredients.  How can we transform Thanksgiving dinner into something else delicious?! I have included to of my family favorites.


Thanksgiving Leftover Enchiladas

Ingredients: 

*note all ingredients are optional depending on what your leftovers are

  • Turkey
  • Mashed Potatoes
  • Green Bean Casserole (or green beans)
  • Sweet Potatoes or yams 
  • Corn
  • Stuffing
  • Cranberries
  • Gravy
  • Jack Cheese (we use Monterey Jack but Pepper Jack would be great too!)

Instructions:

  1. Preheat oven to 350 degrees
  2. Grab a tortilla
  3. Either you can mix all the ingredients except the gravy  in a bowl or keep the ingredients separate. (keep some cheese on the side)
  4. Spoon either the mix or a little bit of each ingredient into the tortilla
  5. Roll up the tortilla leaving the seam side down
  6. Place rolled tortilla in a baking dish
  7. Continue until all tortillas are made
  8. Pour gravy over all the tortillas
  9. Sprinkle cheese on top of them 
  10. Place in oven and bake for 30 minutes or until golden.


Turkey Macaroni and Cheese

Ingredients:

  • 3 cups Your favorite pasta (we use Penne but most use elbow)
  • 2 tbsp. butter
  • 2 tbsp. all purpose flour
  • 3 ½ cups whole milk
  • 1 tsp  salt
  • ¼ tsp black pepper
  • ¼ tsp grated nutmeg
  • 3 cups  cheddar grated
  • 3 cups Monterey Jack grated
  • 3 cups cooked turkey chopped
  • 3 cups leftover stuffing
  • Optional we use 1 tbsp. of Basil and 2 tbsp. of minced garlic

Instructions:

  • Preheat the oven to 375°F. Spray a 9×13 baking pan with non stick spray.
  • Bring a large pot of water to a boil and cook the pasta as directed on the package. Drain and set aside.
  • In a large 10-12 inch pan, melt the butter over a medium heat.
  • Add the flour to the melted butter and stir with a whisk for 2-3 minutes.
  • Gradually add two cups of the warm milk in ½ cup steps making sure to whisk well after each addition of milk and making sure there are no lumps before adding more milk.
  • Once the two cups of milk have been added, simmer the sauce over a low heat for about 5 minutes stirring well.
  • Add the salt, pepper, and nutmeg and stir.
  • Add the grated cheddar and stir until melted and repeat with the Monterey Jack.
  • Gradually add in the remaining 1 ½ cups of warm milk and bring back to a simmer until thick but still a pourable consistency.
  • Place the cooked  pasta into the prepared 9×13 pan and pour
  • Pour the cheese sauce over the pasta and the turkey. Mix well.
  • Using your fingers crumble the stuffing over the mac and cheese.
  • Place in the oven and bake for 30 minutes and the cheese is bubbling around the edges and the stuffing is turning golden.
